CHOCOLATE TARTS

 

I always keep some of these chocolate tarts in my freezer, because they have proved a successful “last-minute” dessert in many occasions. When you make them, prepare a few more than you need and if you ever have unexpected guests you will have a great dessert always at hand and ready in a few minutes; they are ready in only 15 minutes and go directly into the oven from the freezer! And when you taste this sensual treat you’ll be surprised by their melted heart…It’s the ideal dessert for a special night: I often make them for my St. Valentine dinner because they are pure romance!

150 gr. 70% dark chocolate into pieces

100 gr. sugar

150 gr. unsalted butter

40 gr. cake flour

3 eggs

A pinch of salt

 

Place a large pan of water over low heat; put the chocolate in a smaller pan and place it over the other one and let the chocolate melt with gentle heat. Add the butter and mix well (you can also do this with a microwave). Beat the eggs with the sugar until the mixture thickens and becomes spumy (this will take about 10 minutes). Then add the chocolate, flour and salt and keep beating. Butter and sprinkle with cocoa powder some muffin/cupcake pans and fill them for 3/4 with the mixture. Put in freezer for 90 minutes and then cook them in preheat oven at 220° for 15 minutes. Turn upside down and serve immediately. Enjoy this delicacy!
